Beta Glucan As Dietary Fibre
High-molecule substances, which are excreted from organism without digestion and absorption, are called a fibrous material. Mushrooms contain this fibrous material -beta glucans, chitin and heteropolysaccharides (hemicellulose, pectin substances etc.), their content in solids can be within 10-50%. The majority of the active polysaccharides isolated from mushrooms (beta glucans, zyloglucans, heteroglucans, chitin compounds, or their protein complexes) can be classified as a fibrous material (fibres).
Many of these substances have cardiostatic effect and from the point of view of physical-chemic interactions they absorb possible carcinogenous substances in the alimentary canal and enable their excretion from organism.
